Cheese Block Slicing Blades
Use slicing for repeated slices taken from a cheese block. Record slice plane, target thickness, block orientation and product condition. Dividing a loaf into a few fixed portions is covered separately.

Where This Cutting Application Appears
Supplied workpiece and state
Identify the cheese family, block dimensions, temperature, age or moisture condition, rind or coating, inclusions, firmness and grain or extrusion direction. Marchant Schmidt describes fixed portion cutting with interchangeable wire sets, and Facchinetti describes a separate multi-stage block-dicing process for hard and semi-hard cheese. These examples show that portioning and dicing are different operations; they do not prove suitability, hygiene status or performance of any MEIRENTE tool.
Installed process checkpoint
Mark the block datum and orientation; record restraint, feed increment, blade or wire motion, support, clearing and slice transfer.
Output and inspection stage
Measure thickness and inspect both faces, edge integrity and release after the same temperature and stabilization conditions.
Slicing process boundary
Confirm that the actual customer operation matches this process name, supplied product state and approved drawing before evaluating a replacement tool.
Slicing setup checkpoint
Record product direction, temperature or conditioning, retained piece, machine interface and downstream handling before the controlled trial.
Slicing acceptance checkpoint
Use customer-approved dimensions and visible-defect limits on labelled samples from the same formula or cheese state and line settings.
Define the Required Cut Result
- Measure slice thickness distribution from the named datum
- Apply any mass check using the customer-approved weighing method
- Inspect faces and edges for smear, fracture, crumble and compression
- Record release and transfer damage separately from slicing defects
Problems to Diagnose Before Changing the Knife
Slice thickness or mass drifts
Compare feed increment, block slip, product temperature, density variation and the measurement or weighing method.
The face smears, crumbles or fractures
Map temperature and cheese condition against entry, support, motion and face contact before changing tool form.
Slices cling, fold or tear during release
Review clearing and transfer separately from the original cut-face result.

Acceptance Criteria for a Controlled Trial
Agree how the trial will be judged before changing the knife or machine setting.

Knife Forms That May Be Considered
| Possible knife form | When it may be considered | What must be confirmed |
|---|---|---|
| Existing blade slicing arrangement | For a machine already built around a controlled blade stroke or continuous slicing motion. | Confirm holder, motion, support, feed datum and cleaning access. |
| Existing wire or harp slicing set | Only where the installed equipment already uses compatible tensioned wires. | Confirm wire layout, tensioning interface, pitch, travel and results on the actual cheese state. |

Questions About This Cutting Application
Can a knife form be selected from the food product name alone?
No. Confirm the formula or cheese state, temperature, actual cutting motion, installed interface, current tool and accepted and rejected samples.
Can the cheese type alone determine blade or wire?
No. Temperature, moisture, firmness, orientation and the existing machine interface are required.
Is slicing the same as fixed loaf portioning?
No. Slicing creates repeated slices; portioning divides a block into defined larger pieces.
