Bakery Dough Sheet Slicing Blades
Use “slicing” only when repeated sections or layers are removed from a supported dough sheet. Record the slice plane and target thickness. A normal transverse blank cutoff belongs to portioning, while parallel lanes belong to strip cutting.

Where This Cutting Application Appears
Supplied workpiece and state
Confirm the dough formula, laminated or non-laminated construction, process stage, sheet thickness, temperature, tackiness, dusting or oil, inclusions or filling, and support at the cut. GEA describes sheeting systems with dough-sheet loop control and separate cutting or lamination functions, while KAMATA describes a sheet-cutting machine for products such as croissants, pies and pastries. Those examples establish process context only and do not define the customer dough or a MEIRENTE tool specification.
Installed process checkpoint
Mark the slice datum and dough-sheet direction; record support, restraint, knife motion, feed increment, clearing stroke and the dough state at the cut.
Output and inspection stage
Measure slice thickness and inspect both faces for smear, compression, tearing and release damage after the same agreed stabilization interval.
Slicing process boundary
Confirm that the actual customer operation matches this process name, supplied product state and approved drawing before evaluating a replacement tool.
Slicing setup checkpoint
Record product direction, temperature or conditioning, retained piece, machine interface and downstream handling before the controlled trial.
Slicing acceptance checkpoint
Use customer-approved dimensions and visible-defect limits on labelled samples from the same formula or cheese state and line settings.
Define the Required Cut Result
- Measure slice thickness distribution from the named datum
- Inspect both cut faces for smear, tearing, compression and drag
- Record release deformation separately from cut-face defects
- Repeat on labelled samples at the agreed dough temperature and inspection time
Problems to Diagnose Before Changing the Knife
Slice thickness changes through the run
Compare feed increment, sheet slip, support, dough temperature and the measurement datum on consecutive labelled samples.
The face smears or stretches
Separate dough tackiness and temperature from edge condition, cutting motion and face contact before changing geometry.
A slice deforms or reattaches during release
Review clearing motion, support and transfer; record release damage separately from the original cut face.

Acceptance Criteria for a Controlled Trial
Agree how the trial will be judged before changing the knife or machine setting.

Knife Forms That May Be Considered
| Possible knife form | When it may be considered | What must be confirmed |
|---|---|---|
| Existing straight slicing arrangement | For a machine that already supports a repeated straight slicing stroke. | Confirm stroke, holder, support, clearing path and results on the actual dough state. |
| Existing continuous slicing arrangement | Only where the installed machine already uses a band or rotary slicing motion. | Confirm synchronization, tension or runout, guarding and cleaning access from the original interface. |

Questions About This Cutting Application
Can a knife form be selected from the food product name alone?
No. Confirm the formula or cheese state, temperature, actual cutting motion, installed interface, current tool and accepted and rejected samples.
Is slicing the same as cutting blanks from a dough sheet?
No. This page reserves slicing for repeated sections or layers; transverse blanks are portioning.
Can a knife be selected from the pastry name?
No. Formula, sheet construction, temperature, support and installed motion are required.
Public references and scope
These public sources provide material, cutting-method or safety context for this guide. Supplier pages describe their own materials or equipment; they do not establish a MEIRENTE blade specification or performance claim. Confirm the actual grade, machine setup and required cut with a drawing or sample.
