Leafy Vegetable Portioning Blades
Use portioning when a whole head, half head or controlled bundle is divided into a small number of defined pieces for a later process. It is not continuous shredding or fine dicing.

Where This Cutting Application Appears
Supplied workpiece and state
Identify the exact vegetable, whole head, loose-leaf or layered feed form, core or stem content, leaf direction, temperature, surface moisture and upstream wash or dewatering state. FDA guidance treats chopping, dicing, shredding, slicing and tearing as distinct ways fresh produce may be physically altered. It supplies food-process context only and does not certify a knife or process.
Installed process checkpoint
Document head or bundle datum, core orientation, centring, restraint, stroke, counter-surface and transfer to the next station.
Output and inspection stage
Measure specified portion dimensions or customer-approved mass criteria and inspect core fracture, leaf crush, incomplete separation and transfer loss.
Portioning process boundary
Confirm that the actual operation matches this process name and supplied product form before evaluating a replacement tool.
Portioning setup checkpoint
Record product direction, conditioning, retained piece, installed interface and downstream handling before a controlled trial.
Portioning acceptance checkpoint
Use customer-approved dimensions and visible-defect limits on labelled samples from the same supplied condition and line settings.
Define the Required Cut Result
- Measure each portion from the named head or bundle datum
- Apply mass limits only with the approved weighing method
- Inspect core and leaf regions separately for fracture and crush
- Record loose-leaf and transfer loss separately from portion geometry
Problems to Diagnose Before Changing the Knife
Portions differ because heads are off-centre
Compare incoming geometry, centring, core position and the stated datum.
Outer leaves crush before the core separates
Review restraint, entry, travel and support through the full section.
Loose leaves are lost in transfer
Measure cutting loss separately from downstream handling loss.

Acceptance Criteria for a Controlled Trial
Agree how the trial will be judged before changing the knife or machine setting.

- Apply mass limits only with the approved weighing method
- Inspect core and leaf regions separately for fracture and crush
- Record loose-leaf and transfer loss separately from portion geometry
Knife Forms That May Be Considered
| Possible knife form | When it may be considered | What must be confirmed |
|---|---|---|
| Existing supported guillotine | For a station designed to divide a centred head or bundle. | Confirm holder, stroke, support, penetration and clearing. |
| Existing wedge or profile set | Only where the installed equipment already locates and supports that geometry. | Confirm profile, core orientation, interfaces and accepted sample result. |
Information to Send for Technical Review
You do not need to know the exact blade name. Send the available workpiece, machine, current-knife and cut-result information so the application can be reviewed against a drawing or sample.
- Vegetable type, variety and whole-head, loose-leaf or layered feed form
- Core, stem and foreign-material limits plus leaf direction and bulk depth
- Temperature, surface moisture, wash and dewatering state at the cutter
- Target geometry, datum, tolerances and accepted bruise or torn-edge limits
- Existing machine, holder, cutting drum or grid and interface drawings
- Feed belt, compression, cutting motion, speed and discharge arrangement
- Current tool plus labelled accepted and rejected samples inspected at a stated time
- Trial quantity, cleaning constraints, packing step and annual demand

Questions About This Cutting Application
Can a knife form be selected from the food name alone?
No. Confirm the supplied state, temperature or conditioning, actual cutting motion, installed interface, current tool and accepted and rejected samples.
Does equal angle guarantee equal portion mass?
No. Head shape, density and core position also affect mass.
Can a profile be selected from vegetable name?
No. Actual feed form, core and machine support are required.
