Frozen Meat Block Dicing Blades
Use dicing when controlled cuts in two or three directions create diced pieces from a frozen block, slab or strips. Document every stage; a guillotine that only produces slices is not a complete dicing process.

Where This Cutting Application Appears
Supplied workpiece and state
Confirm species and cut composition, lean/fat distribution, bone or foreign-material controls, block dimensions, packaging, core and surface temperature, tempering history and intended downstream process. FAO describes frozen-meat slicers, guillotines, flakers and dicing machines as different operations; those examples do not prove compatibility or performance for a customer block.
Installed process checkpoint
Record slice thickness, strip-grid pitch, cross-cut pitch, block orientation, stage registration, temperature change, support, clearing and collection.
Output and inspection stage
Measure all specified axes on mapped samples and inspect corners, fracture, smear, bridges, doubles, fragments and collection damage.
Dicing process boundary
Confirm that the actual customer operation matches this process name, supplied product form and approved drawing before evaluating a replacement tool.
Dicing setup checkpoint
Record product direction or pattern, conditioning, retained piece, installed interface and downstream handling before a controlled trial.
Dicing acceptance checkpoint
Use customer-approved dimensions and visible-defect limits on labelled samples from the same supplied state and line settings.
Define the Required Cut Result
- Measure every specified piece axis on a mapped sample
- Inspect corners and faces for fracture, smear and pull-out
- Count bridges, doubles and fragments with the customer method
- Record stage and collection losses separately from dimensional results
Problems to Diagnose Before Changing the Knife
Piece dimensions drift between stages
Check every pitch, feed index, stage registration, block geometry and measurement timing.
Corners fracture or fat smears
Compare local composition and temperature with support and cutting action at each stage.
Pieces bridge, double or jam at collection
Separate incomplete cuts and stage misregistration from discharge handling.

Knife Forms That May Be Considered
| Possible knife form | When it may be considered | What must be confirmed |
|---|---|---|
| Existing staged blade or grid dicer | For machinery designed for registered slab, strip and cross-cut stages. | Confirm every holder, pitch, clearance, transfer and release path. |
| Existing rotating dicing machine set | Only where the original machine controls the rotor and counter-tool relationship. | Confirm seats, diameter, speed, clearance, guarding and discharge. |
Information to Send for Technical Review
You do not need to know the exact blade name. Send the available workpiece, machine, current-knife and cut-result information so the application can be reviewed against a drawing or sample.
- Species, primal or formulation and lean, fat, skin, bone or inclusion condition
- Block dimensions, packaging or liner, orientation and incoming geometric variation
- Core and surface temperature plus freezing, storage and tempering history
- Target slice, strip or dice geometry, datum, tolerances and fracture limits
- Existing machine, carriage, holder, grid, counter-surface and interface drawings
- Feed force, restraint, stroke or rotation, clearing and downstream process
- Current tool plus labelled accepted and rejected samples at a stated condition
- Trial quantity, sanitation constraints, packing step and annual demand

Questions About This Cutting Application
Can a knife form be selected from the workpiece name alone?
No. Confirm the supplied state, actual cutting motion, installed interface, current tool and accepted and rejected samples.
Can slice results prove dicing performance?
No. Strip formation, cross-cut registration and collection also require validation.
Does a machine example prove compatibility?
No. The actual block and complete installed interface govern the review.

These public sources provide material, cutting-method or safety context for this guide. Supplier pages describe their own materials or equipment; they do not establish a MEIRENTE blade specification or performance claim.
