Fish Fillet Strip Cutting Blades

Use strip cutting when a fillet, slab or stacked fillets are divided into parallel longitudinal strips. Record strip direction relative to the muscle fibres and whether a later cross-cut creates portions or dice.

Updated October 14, 2026

Fish Fillet before and after strip cutting with accepted and defect edge references
Illustrative workpiece only; not a MEIRENTE production trial, approved customer sample, food-safety certification, planting result or knife-performance claim.

Fish-fillet strip cutting: control lane width and parallelism while diagnosing fibre pull, gaping, joined strips and discharge deformation.

Where This Cutting Application Appears

Supplied workpiece and state

Identify species, fillet geometry, skin-on or skinless state, pin-bone or membrane condition, fresh/chilled/frozen state, product temperature, fibre direction and surface moisture. FAO material distinguishes filleting, steak slicing and other fish-processing operations, while FDA guidance addresses process hazards and controls. Neither source defines the customer fillet or a MEIRENTE tool specification.

Installed process checkpoint

Map each lane to a lateral datum; record fillet orientation, stack depth, centring, cutter pitch, support, restraint and strip discharge.

Output and inspection stage

Measure every strip across the cutting span and inspect parallelism, taper, gaping, skin connection, complete separation and post-discharge shape.

Strip Cutting process boundary

Confirm that the actual customer operation matches this process name, supplied product form and approved drawing before evaluating a replacement tool.

Strip Cutting setup checkpoint

Record product direction or pattern, conditioning, retained piece, installed interface and downstream handling before a controlled trial.

Strip Cutting acceptance checkpoint

Use customer-approved dimensions and visible-defect limits on labelled samples from the same supplied state and line settings.

Define the Required Cut Result

  • Measure every strip width from the named lateral datum
  • Check taper and parallelism over the retained strip length
  • Inspect flesh and skin sides for gaping, tear and complete separation
  • Record discharge curvature separately from cutter pitch

Problems to Diagnose Before Changing the Knife

Strip widths differ across the set

Compare fillet centring, cutter pitch, holder alignment, natural taper and the lateral datum.

Strips curve or separate along muscle fibres

Review orientation, support, restraint and cutting direction relative to fibre.

Skin or membrane keeps adjacent strips joined

Inspect penetration and support at the exit before attributing the result only to sharpness.

fish fillet Strip Cutting Diagnostic

Acceptance Criteria for a Controlled Trial

Agree how the trial will be judged before changing the knife or machine setting.

  • Measure every strip width from the named lateral datum
  • Check taper and parallelism over the retained strip length
  • Inspect flesh and skin sides for gaping, tear and complete separation
  • Record discharge curvature separately from cutter pitch

Knife Forms That May Be Considered

Possible knife formWhen it may be consideredWhat must be confirmed
Existing parallel blade bankFor a machine designed to support multiple straight or curved blades.Confirm pitch, alignment, penetration, support and clearing.
Existing rotary disc or shaft setOnly where the installed line already uses synchronized rotary cutting.Confirm shaft, spacers, diameter, runout, overlap or clearance and guarding.

Information to Send for Technical Review

You do not need to know the exact blade name. Send the available workpiece, machine, current-knife and cut-result information so the application can be reviewed against a drawing or sample.

  • Species and fillet form, including skin, membrane, pin-bone and belly-flap condition
  • Fillet dimensions, natural taper, fibre direction and supplied temperature state
  • Surface moisture, glazing, thawing or conditioning history at the cut
  • Target geometry, datum, tolerances and accepted gaping, tear or trim limits
  • Existing machine, holder, belt, counter-surface and interface drawings
  • Feed orientation, restraint, cutting motion, speed and discharge arrangement
  • Current tool plus labelled accepted and rejected samples inspected at a stated time
  • Trial quantity, sanitation constraints, packing step and annual demand

Questions About This Cutting Application

Can a knife form be selected from the workpiece name alone?

No. Confirm the supplied state, actual cutting motion, installed interface, current tool and accepted and rejected samples.

Is strip cutting already dicing?

No. It creates one-direction strips; a registered cross-cut is required for dicing.

Can strip direction be ignored?

No. Fibre, skin and fillet orientation can change the defect pattern.

These public sources provide material, cutting-method or safety context for this guide. Supplier pages describe their own materials or equipment; they do not establish a MEIRENTE blade specification or performance claim.
